Depart by Coach Bus at 9:00 AM and return to New York City by 9:30 PM

Spend a day in Ghent—in the heart of New York’s Hudson Valley—with independent non-profit global certifier, A Greener World(AGW), which will provide a backstage pass to the farmers, animals and food label experts at the forefront of sustainable, regenerative agriculture. Visit with Mimi Beaven, owner of Made in Ghent Farm + Café, where you will enjoy a tour of the small family farm and a delicious handmade brunch. Wander over to Grazin’ Angus Acres, where former hospitality executive turned farmer, Dan Gibson, will take you on a pasture walk and tour of his beef farm. Learn how to find meat, dairy and eggs that really make a difference. Be prepared to learn the true meaning of “going green” where the real experts will demystify overused and misused claims such as “grass-fed”, “pasture-raised”, and “humanely-raised”. The day will end with a delicious meal at Grazin’ Diner.

This year’s SummerDine is bigger and better than ever, and the Committee—headed by Dame Lori Levy—has solicited tables at some of the city’s most exciting restaurants, with fabulous wines paired with them all.

Join LDNY for a fabulous party and book launch celebrating Priya Krishna's acclaimed new book Indian-ish (published April 2019 by Houghton Mifflin Harcourt). Priya, a contributor for The New York Times, Bon Appétit and The New Yorker, will be interviewed by well-known author, television personality and Times of India journalist, Rashmi Uday Singh, in a spirited conversation about what it means to transform the tastes and memories of Indian cooking in America.

A DAY IN THE COUNTRY ITINERARY

8:45 AM. We meet at Grand Central Station, NYC—under the clock, having purchased round-trip tickets to Wassaic, NY—and board the train for a 9:10 AM departure.

11:30 AM. Arrive in Wassaic to meet our van and driver for the day. We’ll be whisked off to Chaseholm Farms where all guests, including those driving, will convene at 12:10 PM. There we’ll be greeted by Sarah Chase—one of a handful of female grass dairy farmers today—who runs this third generation owned (350–acre) dairy farm. We’ll meet the herd face-to-face, learn from Sarah what grass-fed dairy really entails and why she’s so passionate about unconfined, regenerative grass farming.

Next, we’ll “follow the milk” to Chaseholm Creamery for a small tour/tasting and lunch of farmstead cheeses—from Nimbus, a delicious triple cream, to nutty-buttery Alpage, a Gruyere style cheese, to Barrett’s Blue, a Roquefort style blue with bite—all made by Sarah’s brother, our host Rory Chase. Before leaving, we make a quick stop at the small Chaseholm Farm store for some souvenirs.

We’re off to Hillrock Estate Distillery, only minutes away. Hillrock is one of a precious few distilleries worldwide operating in the traditional way.  We view the process, visit “the malting cathedral” and taste the spirits crafted from their own estate-grown grains. (Hillrock’s master distiller was master distiller at Markers Mark). The Wine Spectator describes Hillrock as the “best single malt whiskey in the United States today.”

5:15 PM. Time to sit down and relax at nearby Stissing House (1794), one of the most authentic charming venues in the Hudson Valley. Owner-hosts, Patricia and chef Jean Michel—formerly of Provence Restaurant in Greenwich Village—will prepare a three-course meal paired with wine to enjoy and savor before we take a twilight drive to catch our 8:15 PM train bound for Grand Central Station.

Sarah and Rory Chase, cousins of Dame Patricia McCann, share more than the family gene and passion for whole food and the good table. Their great grandfather, Alfred W. McCann, was a pure foods advocate, journalist, and radio broadcaster in the ‘20’s. Three generations and 90 years later, the McCann name is still heard on New York radio.

Have  you noticed some trendy terms linking the worlds of healthcare and food of late? Terms like ”veggie prescriptions” ”culinary medicine” and ”teaching kitchens”? Well the connection between nutrition and health is more than a trend. The phenomenon is growing rapidly as clinicians recognize the important role of food in supporting health and well-being. Two members of our Chapter have been pioneers of this work. Join FamilyCook Productions founder and author Dame Lynn Fredericks, along with Dame Ann Ogden Gaffney, founder of Cook for Your Life, for a deep dive into the many ways that the culinary arts are blending with healthcare.

The program will include:

  • Lynn’s secrets from FamilyCook’s award-winning teaching kitchen programs utilized by such clients as Boston Medical Center to treat patients with chronic diseases. 
  • Hands-on opportunity to co-create examples of FamilyCook’s most in-demand and delectable recipes.
     
  • Insight from Dame Ann Ogden Gaffney’s innovative NIH supported Cook for Your Life website and healthy cooking programming, designed to teach cancer patients healthy eating habits through basic cooking skills. 
     
  • Opportunity to ”dig in” and help prepare additional recipes from Ann’s James Beard nominated cookbook
     
  • Q&A session - moderated by culinary nutritionist, Dame Stefanie Sacks, so you can ask the experts while enjoying the delicious and healthy fruits of shared labor.

Korean Cooking Class and Buffet Dinner

Join Les Dames d'Escoffier New York at Dame Suzi O'Rourke's Cooking by the Book, for a Hands-On Korean Cooking Class and Buffet Dinner.

Shin Kim will give a hands-on introduction to Korean Buddhist Temple Cooking. She’ll explain the tradition of mindful eating and minimizing waste, which makes it a perfect class for the new year. In addition, she’ll teach how to use the foundational sauces of Korean cooking and some of the cuisine’s most popular ways to prepare vegetables. A native of Seoul, Korea, Shin attended the Institute of Culinary Education. She has studied Korean temple cuisine under the Buddhist nun Jeong Kwan at Chunjinam Hermitage. In addition to working at such places as Jean-Georges and Adour by Alain Ducasse and Abigail Kirsch Catering, Shin has taught at the Natural Gourmet Institute. Shin is the author of Vegetarian Dishes from My Korean Home.

LDNY's exciting new fundraising initiative SummerDine highlights the best of summer dining and the season's bounty at a select number of New York's finest restaurants on August 6th and 13th. Our partners include several high-profile women chefs/restaurateurs such as Dame Lidia Bastianich of Eataly, Suzanne Cupps of Untitled at the Whitney Museum, Dame Maria Loi of Loi Estiatorio, Dame Surbhi Sahni of Saar Indian Bistro, and Dame Barbara Sibley of La Palapa Cocina Mexicana. With celebrated Sicilian celebrity Chef and Instructor Peppe Giuffre', this is the first special educational trip and tour of Sicilian food and wine producers arranged by New York Dame Marisa May-Metalli and her father Tony May, former owner of the Rainbow Room and San Domenico NY for members of Les Dames d'Escoffier to an eight-day trip including five morning cooking classes with daily excursions.

  • Five mornings we will participate in cooking classes and have lunch.
  • Each afternoon we will visit the surrounding Sicilian villages and towns, going to local markets and tasting Artisan cheeses, pasta, breads, olive oil, and wines.

Les Dames d'Escoffier New York Presents: Year of the Dog Celebration - A Dim Sum Feast & Chinatown Tour, conducted by Dame Liz Young of Culinary and City Tours Back alleys and chop suey, no more! From hand-pulled noodles to artistically presented dim sum, New York's Chinatown flaunts a selection like never before, including foods from Hong Kong, and the Sichuan, Shaanxi, Guangdong, and Fujian provinces. The morning begins with a dim sum breakfast-steaming delicacies from the Cantonese tradition-so arrive hungry! We'll learn all about the neighborhood, explore a nearby temple, visit one of the unique food markets, sample Malaysian beef jerky, and end with a sweet treat. Dinner at Sahib - A Tour Of Regional Indian Cooking Dine with fellow Dames at Sahib restaurant, owned by Chef Hemant Mathur, husband of Dame Surbhi Sahni. Sahib was recently awarded 2 stars by Pete Wells in The New York Times for its masterful presentation of dishes not often found in other Indian restaurants. Among the dishes we'll be served are kori gassi, an "irresistible" chicken in coconut milk stew seasoned with coriander, asafetida and curry leaves, and cauliflower coated in red chili sauce. The meal will be paired with wines from Sandhi, a small production winery focusing on select vineyards from the Sta. Rita Hills in Santa Barbara County. Nat Gurner, a representative of the winery will be present to discuss the pairings. Dessert will be provided by Surbhi's sweets company Bittersweet NYC. Hosts: Dames Surbhi Sahni and Sharon Franke.
